Vegan Powdered Jelly Donuts

Little pillows of fried dough, filled with jelly and rolled in powdered sugar.
I love donuts! But I can’t say that powdered donuts are my favorite. So why did I make some? Well, National Sibling Day made me of foods my brother and I liked as kids. My brother always had raspberry filled powdered donuts. One day, he smashed one right in my face! I remember getting a donut smashed in my face, and I’m sure I deserved it…but I can’t even remember why now!
Whatever the reason, it’s a fun memory and a great reason to make some donuts! Just hopefully I won’t get one smashed in my face.
Easy Ingredients for Vegan Powdered Jelly Donuts
This recipe for the dough has very few ingredients, and it comes together very quickly! Here is what you need for the dough:
- All purpose flour
- Yeast
- Salt
- Soy Milk
- Agave Syrup (however you can sub maple syrup or even granulated sugar)
And then to make them into vegan Powdered Jelly Donuts you need:
- Powdered Sugar
- Jam or Jelly in any flavor you like
Then lastly you just need enough oil to fry them in. I used Vegetable Oil.
Frying up Vegan Powdered Jelly Donuts
This recipe requires that you deep fry. I’m always very hesitant to deep fry. I’ll do it, but it’s not my favorite thing to do. Why? For a couple reasons. One, I have kids and having hot oil on the stove scares me! Second, I don’t really know what to do with the oil afterward. I’ve reused it, but I don’t fry that often so sometimes I just have to dump it. I need to do some research on what to do about this.
I used my cast iron Dutch Oven to fry the Vegan Powdered Jelly donuts. The sides are nice and high and the cast iron is great to fry in. Frying in batches of 3 allowed the oil temperature to stay stable and not dip below 350 degrees Fahrenheit.
Small Batch for No Waste
I decided to make a smaller batch so that I don’t have to worry about eating a couple dozen donuts before they go stale. Although eating a couple dozen donuts sounds fun in theory, the actual execution might be kind of difficult, haha. When I’ve made a batch of goodies that yields 24 or more servings, a lot goes to waste. So I’ve decided to be proactive and half most recipes, and have the recipes I write yield less servings. Since I’ve started do that, there has been much less wasted food. This is what is right for my family, some families might not have this issue at all! And I’m sure that as my boys get bigger, I might have to start doubling or even tripling recipes, who knows!

Vegan Powdered Jelly Donuts
Ingredients
- 2 cups All Purpose Flour
- 2 teaspoons Dry Active Yeast (or 1 packet)
- 1/2 teaspoon Salt
- 1 Cup Soy Milk
- 4 Tablespoons Agave Syrup
- 1 Cup Powdered Sugar
- 1/2 Cup Raspberry Preserves (Jam or Jelly)
- Oil for Frying
Instructions
- In a large bowl, whisk together flour, yeast, and salt.
- Pour in the soy milk and agave syrup and mix together until a dough forms.
- Tip the dough out onto a work surface and knead until a smooth, not too sticky dough forms.
- Shape the dough into a ball and place it back into the bowl it was mixed in. Cover the bowl and let it proof for 90 minutes.
- After the dough has risen, tip the dough back onto your work surface and press it flat to about a 3/4" thickness. (You can use a rolling pin, but I just used the heel of my hand and it was perfectly fine)
- Using a 2" cookie cutter, cut rounds of the dough and then place it on to a tray or baking tray (this is just for rising). Repeat until all the dough has been cut into circles.
- With the dough circles on the tray, cover and allow them to rise for about 30 minutes.
- About half way through the second rise, heat oil in a deep frying pot to 350 degrees F.
- When the oil is hot enough and the dough has risen, fry the donuts in batches of 3, 1 minute on each side, using tongs or a frying 'spider' to turn them.
- When the donuts are done frying, place them on a rack to drain.
- Repeat until all donuts have been fried.
- Allow the donuts to cool enough to handle and then roll them in powdered sugar then place them back on the rack to allow any excess powdered sugar to fall off.
- After the donuts have cooled more, use a skewer to make a hole in the donut.
- Fill a pastry piping bag fitted with a small tip with the raspberry jam.
- Fill each donut with a few tablespoons of jam.
- Enjoy the donuts while they are still slightly warm, or when they've cooled completely.
