These are super fudgy and very sweet Vegan Butterscotch Brownies (Blondies)!

After some research, I’ve decided Butterscotch Brownies and Butterscotch Blondies are the same thing. I kind of like calling them Blondies  a little better because you know exactly what you are getting. And I’ve always loved blondies! They are basically a bigger, thicker cookie and what’s not to love about that. Plus they’ve got the texture of a brownie, which makes them even more special.

Finding Vegan Butterscotch chips that are commercially sold is pretty impossible to find, so for this Vegan Butterscotch Brownie (Blondie) recipe, you’ll first want to make a batch of my Vegan Butterscotch Chips

In my post for the Vegan Butterscotch Chips, I mention that the chips tend to melt into this recipe (they have a longer cook time and unfortunately homemade baking chips can’t stand up to it). But don’t let that stop you from making them and using them in this recipe! You still get that buttery butterscotch flavor.

If you want, however, the Vegan Butterscotch Chips can be replaced with vegan chocolate chips or vegan white chocolate chips. They will still be delcious blondies whichever you choose.

All in One mixed Vegan Butterscotch Brownies (Blondies)

I mixed all the ingredients in the same bowl in this recipe. No need to measure the dry and wet in separate bowls. Am I lazy? Or am I just frugal with my time and clean up time? I like to think it’s the latter.

Once the mix comes together they are just pressed into the bottom of a baking dish. You can use a 9″x13″ baking dish, but I like them on the thicker side. Therefore, I use the smaller 7″x11″ pan. Baking for 30 minutes at 350 degrees F gives these brownies/blondies their delicious fudginess. However if you like, you can bake them closer to 40 minutes and they will be a little bit firmer.

Vegan Butterscotch Brownies (Blondies)

  • 2 1/2 Cups All Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon salt
  • 1 Cup Vegan Butter softened
  • 1 Cup Brown Sugar packed
  • 3/4 Cup Granulated Sugar
  • 2 Tablespoons Vegan Egg Replacer (Just Egg, flax egg, or other)
  • 1 Tablespoon Vanilla Extract
  • 2 Cups Vegan Butterscotch Chips (recipe shared on this blog)


  • Preheat the oven to 350 degree F and prepare a 7"x11" baking dish (or 9"x13", but I like them a little thicker).
  • Mix the vegan butter, brown sugar, and granulated sugar until pale and creamy (in a stand mixer with paddle attachment or by hand with wooden spoon,
  • Add the vegan egg replacer and vanilla extract to the mixture and mix again until well incorporated.
  • Pour the flour, baking powder and salt directly into the bowl and mix until a thick cookie batter forms.
  • Add in the vegan butterscotch chip and mix in until well incorporated.
  • Press the mixture into the bottom of the baking dish.
  • Bake in the oven for 30-40 minutes or until baked and golden brown,
  • Remove from the oven and allow the brownies/blondies to cool before cutting them into squares.
