Roasted Sweet Potato Wedges and Creamy Green Cashew Dip

Do you ever struggle finding good vegan snack? What do vegans snack on? If your idea of a snack is cheese and crackers, or cheesy flavored chips, or string cheese, or something cheese cheese cheese, going to a plant based diet might leave you feeling lost when trying to choose a snack!
What do vegans even snack on?
Luckily, if you’ve been vegan long enough, you know there is an abundance of great snacks! Snacks don’t have to center around cheese, yogurt, lunch meat or the zillion processed snack foods that have milk powder hiding in them somewhere.
Now, I love lots of plant based processed snack foods like chips, crackers, vegan cheeses, etc. But that’s also not very cost effective for vegan snack. So if you’re a vegan on a budget, making vegan snacks at home is not only a great way to save money, but they can also be packed full of flavor and nutrients.
With a well stocked vegan pantry and refrigerator, you may even always have the ingredients on hand for this great snack. Other than basic pantry items like salt, pepper, oil, garlic, and lemons, you’ll just need:
- Sweet Potatoes
- Raw Cashews
- Tahini
- Parsley
Other than that, you just need a little time, a blender, and an oven and then you can easily make a great vegan snack.
The Makings of a Great Vegan Snack
Roasted Sweet Potato is a super versatile food, and make a great vegan snack. Sometimes all you need is to roast one and add some peanut butter and it’s a great vegan snack on it’s own! But if you want some thing a little more robust, there is a great recipe to try.
Roasted Sweet Potato Wedges and Creamy Green Cashew Dip
Ingredients
Creamy Green Cashew Dip
- 1 cup raw cashews
- 2 Tablespoons Tahini
- 1 clove garlic
- 1/2 cup fresh parsley
- 1/2 teaspoon salt (or to taste)
- juice of 1/2 lemon
- 1/2 cup water
Roasted Sweet Potato Wedges
- 3 sweet potatoes (cut into 1/2" slices or wedges)
- 3 tablespoons olive oil
- salt and pepper to taste
Instructions
Creamy Green Cashew Dip
- Soak the cashews in boiling water for about 30 minutes.
- When the cashews are done soaking, drain and rinse them.
- To a high powered blender, add all the cashew dip ingredients and blend until smooth, scraping down the sides as needed. Add more water if needed to get a smooth consistency, just be sure to check the seasoning and add more salt and/or lemon juice if needed.
- Set aside until sweet potatoes are ready to serve.
Roasted Sweet Potato Wedges
- Preheat oven to 400 degrees F.
- Line a baking sheet with aluminum foil, and grease the foil with 1tablespoon of olive oil.
- Place the sweet potato slices on top of the greased foil.
- Drizzle the remaining 2 tablespoons of olive oil over the sweet potatoes and sprinkle with salt and pepper.
- Toss the sweet potato slices until they are evenly coated with the oil, salt and pepper.
- Evenly spread the sweet potatoes over the foil liked baking sheet, trying to make a single level.
- Bake for 30 minutes, turning once half way through the baking.
- Remove the sweet potatoes from the oven and allow to cool slightly before serving with the Creamy Green Cashew Dip.
