Easy Vegan Kid Lunches – Filling Vegan Lunches for Big Kids

Simple lunch ideas, perfect for packed lunches that are hearty and filling for bigger kids.

My kids are growing so fast. My oldest, Harrison currently 12, has developed a voracious appetite. Therefore, I find I’m finding more ways to increase the volume of his lunches (and dinners) and maintain good nutrition as well. Now with school about to start, I’m already planning what I’m going to be packing for his lunches. So it’s important they are easy to make ahead, pack and keep until his lunch time at school.

Previously, I posted this blogpost “Easy Vegan Kid Lunch Ideas” and it is still a great resource for lunch ideas. But I wrote that during quarantine while my kids were still distance learning. So some of the ideas are easier to make at home during the day. They are almost more appropriate for summertime or weekend lunches. 

So now I’m going to focus more on vegan lunches that are filling for big kids and that can be packed ahead and travel well. I like to pack lunches the night before to make mornings easier. All of these vegan kid lunches would be appropriate to pack the night before (or the morning of if that fits your schedule better).

1. Quick and Easy Burritos Jump to Recipe

These burritos are delicious and crazy healthy. They can be easily made the night before and even use leftover rice (that has been safely stored).

See the full recipe at the bottom of this blogpost. However, these are simply black beans (that have been mashed with salsa, seasonings, and mixed with corn and green onion), rice, greens, bell peppers, avocado and more salsa if they’d like!

2. Veggie Burgers

Veggie Burgers are excellent to pack for a big kid’s lunch. They are filling, easy, and the keep really well. We like to make homemade black bean burgers, but honestly you can just heat frozen store bought veggie burgers. Just assemble the veggie burgers once they’ve cooled with a bun and all your kid’s favorite toppings.

3. Bagel

Bagels are filling and my kids never tire of them. Toasted or untoasted, they can be assembled with vegan cream cheese, avocado, hummus, and then bulked up with anything else that they like (lettuce, greens, cucumber, sprouts, etc.)

4. Leftovers

I love leftovers for lunch. I plan dinners that make excellent lunches the next day. It’s zero waste and saves so much time.

Vegan Kid Lunch Ideas

Quick and Easy Vegan Burritos

These are the quickest and easiest vegan burritos and can be made in 20 minutes (or eve less!)

Course Dinner, Lunch
Cuisine vegan
Servings 2 Burritos

Ingredients
  

Black Bean Filling

  • 1 Can Black Beans drained and rinsed
  • 3 Tablespoons Salsa
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon salt
  • 2 green onions chopped
  • 1/4 Cup Frozen Corn kernels

For assembly

  • 2 Burrito Sized tortillas
  • Cooked Rice
  • Salsa
  • Lettuce or Greens
  • Avocado sliced
  • Bell Pepper sliced

Instructions
 

Black Bean Filling

  • In a bowl, add the the black beans and salsa and mash together.
  • Add the garlic powder, onion powder, salt, green onions, and corn and mix together.
  • Heat the mixture in the microwave or over the stove.

Assemble the Burritos

  • Assemble the burritos by piling desired amounts of the black bean mixture, rice, and any other desired toppings.
  • To roll up the burrito, first fold over the shorter ends of the burrito, make 1/4 turn and then roll the burrito up.
